1 ½ 8 oz cans crescent rolls 1 stick unsalted butter ¾ cups brown sugar 1 tsp vanilla 1-2 tsp cinnamon 1 tsp lemon juice 1 cup orange (or other citrus) soda 2-3 fresh peaches
Preheat oven to 350 degrees Fahrenheit. Butter an 8x8 inch baking dish.
Peel peaches and cut each into 4-6 slices. Roll each peach slice in a crescent roll to form dumplings and place in the buttered dish. Melt the remaining butter in a pan on the stove then stir in the brown sugar, cinnamon, lemon juice, and vanilla. When the mixture thickens, remove from the heat and pour it over the dumplings. Pour the soda in the middle and along the edges of the pan; do not pour over the rolls.
Bake for 30-40 minutes, or until the dumplings turn golden brown. Sprinkle cinnamon and sugar on top of the baked dumplings to taste. Serve warm.
