1 ½ cups shredded zucchini (about 1 ½ medium zucchini) 1 cup panko bread crumbs with Italian seasoning (You can buy these already seasoned, or you can add Italian seasoning to taste.) ½ cup shredded parmesan cheese 1 large egg
Preheat oven to 400 degrees Fahrenheit. Shred zucchini with a vegetable grater. Pat zucchini dry (it doesn’t need to be completely dry - just absorb some of the moisture).
Measure out 1 ½ cups of patted dry zucchini and add to a large mixing bowl. Add egg, cheese, and seasoned bread crumbs. Stir until everything is thoroughly combined.
Squeeze 1 Tbsp of zucchini mixture in the palm of your hand, compressing it. Some water will be released. Then use both hands to mold it into a cylindrical tater tot shape. Place onto a baking sheet lined with parchment paper or a silicone baking mat. Repeat until the baking sheet is full, or until you run out of the zucchini mixture.
Bake for about 20 minutes until the bottoms are golden brown and crisp. Flip over and bake for another 5 minutes. Serve warm.
