Fried Honeycakes, or Fried Fairycakes – a Beltane recipe
Great for putting outside as a fairy offering.
Makes: 36 cakes
4 tablespoons sugar 1 ½ cups unbleached flour ¼ teaspoons nutmeg ¼ teaspoons cinnamon ¼ teaspoons salt 2 eggs 2 cups honey oil 1 cup sweet white wine
Beat the egg and wine in a medium bowl. In a small bowl combine the flour, cinnamon, salt, & sugar. Stir the dry mixture into the wet mixture. Let it stand 30 minutes. Combine the honey and nutmeg in a small bowl. Heat ½ inch of oil in a frying pan until hot. Drop the batter in the oil 1 tablespoon at a time and fry until golden brown. Drain on paper towels. Dip into the honey mixture and serve.
