Pumpkins are commonly used for decoration this time of year. We can also appreciate the pumpkin for the seeds it gives us. Roasted pumpkin seeds make a healthy snack. They are a great source of manganese, phosphorus, magnesium, iron, copper, protein, and zinc. Pumpkin seeds have also been known to have health benefits related to kidney/bladder disorders, elevated cholesterol and blood lipids, rheumatoid arthritis, osteoporosis, depression, learning disabilities, and elimination of parasites.
Directions: In a large mixing bowl beat sugar, eggs, pumpkin, oil, and vanilla until smooth In another bowl mix the dry ingredients Mix the dry ingredients with the pumpkin mixture Fold in the chocolate chips Grease muffin pan or line with paper muffin cups Fill muffin pan with cups ¾ full Bake at 400 degrees Fahrenheit for 16 – 20 minutes Let cool before taking out of pan
